So my friend Kyna posted some recipes that she is using from this website called Gina's Skinny Recipes. Since I have started again on Weight Watchers, I decided to actually meal plan and try some out. Wow...they were good. Here are the ones we tried in the past week:
Crock-Pot Chicken Santa Fe- super easy and super yummy!!! I used the leftover chicken and put it on top of salads for lunch!
Arroz con Pollo- oh Lordy....this was a favorite with everyone! It took a little bit longer to cook than I originally planned, but it was worth it!!! One of my all-time favorite things I have ever cooked, I think. Yes, it is that good.
Pork Chops with Mushrooms and Shallots--- easy, yummy! and I made it with Oven Roasted Cauliflower--- now, I don't think I have ever liked cauliflower, and I have never cooked it before....but this was yummy! Even Emma kept getting more cauliflower to eat!
This week we are trying: Slow-cooked Sweet Barbacoa Pork with Chipotle's Cilantro Lime Rice; The Skinny Tuna Melt; and then something I saw on Kitchen Boss (on TLC, Buddy from Cake Boss cooking other food): Roasted Rosemary Chicken.
I will say, not working full-time does allow me to have energy to cook more- something I love to do!
